Tuna Croquette
Need to whip up a party dish quick and easy? The easy-to-make savoury tuna croquette is crunchy on the outside and fragrantly satisfying on the inside.

- 200 gpotatoes, boiled until soft
- 1can tuna in water, drained and flaked
- 60 gyellow onion, chopped
- 1stalk spring onion, chopped
- 0.5 tspsalt
- 1 tspsugar
- a dash of white pepper
For the breading
- 40 gplain flour
- 1egg, well beaten
- 0.75 cuppanko or breadcrumbs
Steps
1) Peel and mash the potatoes. Combine with tuna, onion, spring onion, salt, sugar and pepper. Mix and blend well. Shape into patties.
2) Preheat Cubie oven on Healthy Fry.
3) Dust patties lightly with flour, then dip into the egg. Coat both sides with breadcrumbs.
4) Place patties on the Cubie tray. Cook on Healthy Fry for 25 minutes until golden brown. Serve hot.
