Steamed Lotus Rice with Garlic Prawns

  • 2 pcsdried lotus leaves, boiled until softened
  • 230 grice, washed
  • 2 tbspcooking oil
  • 20 gdried shrimp, soaked and chopped
  • 2 tspgarlic, chopped
  • 60 gcarrots, cubed
  • 3Chinese dried mushrooms, soaked and cubed
  • 3 tspsoy sauce
  • 0.25 tspsesame oil
  • 0.125 tspsalt
  • Dash of pepper
  • Few drops of dark soy sauce
  • 400 gwater
  • 8medium size prawn, deveined
  • 30 ggarlic, chopped
  • 3 tbspcooking oil

Cubie function: Healthy Fry and Healthy Steam

Steps

1) Place 30 g of chopped garlic and 3 tbsp cooking oil in a small oven-proof dish and cook on Healthy Fry (with preheat) mode for 10 minutes. Set aside.

2) In a casserole, combine oil and dried shrimp and cook on Healthy Fry mode for 5 minutes. Add garlic and continue to Healthy Fry for another 5 minutes. Add in cubed carrots, mushroom, rice and all the seasoning and water. Stir well. Cook on Healthy Steam mode at 120°C for 30 minutes.

3) Arrange boiled lotus leaves in a deep bowl. Fill up cooked rice and arrange prawns on top. Spoon garlic onto the center part of prawns and drizzle some garlic oil on top.

4) Cook on Healthy Steam mode (with preheat) at 150°C for 12 minutes.

5) Serve warm.
