Spanish Gazpacho Soup
A classic, healthy cold soup made of raw blended vegetables. Add some ice or chill it in the fridge, and it becomes a cool and refreshing meal for a hot afternoon.
Ingredients
- 500 g Red Tomato, very ripe
- 0.25 nosCucumber
- 0.25 nosRed Capsicum
- 0.25 nosShallot
- 0.5 nosGarlic
- 1 tbspLemon Juice
- 2 tbspOlive Oil
- Salt to taste
- 4 pcsCrusty Bread, toasted
Steps
1) Put all ingredients in the blender and puree until fine.
2) Strain through a sieve and serve or chill for 1 hour.
3) Drizzle olive oil on gazpacho and serve with toasted crusty bread.
