Fresh bread trio
Choosing quality ingredients is an easy way to make bread healthier. Dried fruit adds minerals, matcha adds nutrients found in tea leaves, and wholegrain flour adds dietary fiber. Add your favourite nutritious fillings to your bread!
Fruit loaf
Ingredients
- 250 ghigh-gluten flour
- 10 gbutter
- 17 ggranulated sugar
- 1 tbspmilk powder
- 1 tspsalt
- 190 mlwater*
- 1 tspinstant dry yeast
List A (ingredients to be added to the raisin-nut dispenser):
- 20 gdried figs, chopped
- 20 gdried apricots, chopped
- 20 gdried cranberries, chopped
* If the room temperature is 25°C or higher, use cold water (approximately 5°C), and use 10 g (10 ml) less water.
Method
1) Mount the kneading blade in the bread pan. Put the ingredients in the bread pan, except for the instant dry yeast and List A ingredients.
2) Place the bread pan inside the bread maker and place the instant dry yeast in the yeast dispenser.
3) Put ingredients in List A into the raisin and nut dispenser.
4) Select Menu 1. Press Raisin, select Yes, then press Start.
5) When the beep sounds, press Stop. Remove the bread pan, let it cool for a couple of minutes, and then remove the loaf.
Note: This recipe was designed for the Panasonic Bread Maker SD-P104.

Marbled matcha bread
Ingredients
- 250 ghigh-gluten flour
- 2.5 tbspgranulated sugar
- 5 g(1 tsp) salt
- 6 g(1 tbsp) milk powder
- 10 gbutter
- 180 g(180 ml) water*
- 2.8 g(1 tsp) instant dry yeast
List A(ingredients to be added later):
- 3 gmatcha (powdered green tea)
- 17 gsugar
- 5 g(1 tsp) water
*¹ If the room temperature is 25°C or higher, use cold water (approximately 5°C), and use 10 g (10 ml) less water.
*² This disclaimer is for 180g (180ml) water.
Method
1) Mix together all the ingredients in List A until they form a paste.
2) Mount the kneading blade in the bread pan. Put the ingredients in the bread pan, except for the paste prepared in Step 1 and the instant dry yeast.
3) Place the bread pan inside the bread maker and place the instant dry yeast in the yeast dispenser. Select Menu 8, then press Start.
4) When the beep sounds, open the lid and take out the dough. (Note: Do not press Stop.) Roll out the dough until it is 25 cm long and 15 cm wide.
Thinly coat the surface with the paste from Step 1. Keeping the coated surface inside, roll up the dough into a long thin roll.
5) Cut the rolled-up dough into four equal lengths and stack them upright in the bread pan, with the cut sides down. Put the bread pan back inside the bread maker and press Start.
6) When the beep sounds, press Stop. Remove the bread pan, let it cool for a couple of minutes, and then remove the loaf.

Wholegrain bread (50% wholegrain flour)
Ingredients
- 125 gwholegrain bread flour*¹
- 125 ghigh-gluten flour
- 10 gbutter
- 2 tbspgranulated sugar
- 6 g(1 tbsp) milk powder
- 5 g(1 tsp) salt
- 200 g(200 ml) cold water*² (5°C)
- 2.8 g(1 tsp) instant dry yeast
*¹ This recipe will not work with whole wheat flour (exclusive for dim sum bread), cake flour (weak flour) or a non-wheat wholegrain flour.
*² If the room temperature is 25°C or higher, use 10 g (10 ml) less water.
Method
1) Mount the kneading blade in the bread pan. Put the ingredients in the bread pan, except for the instant dry yeast.
2) Place the bread pan inside the bread maker and place the instant dry yeast in the yeast dispenser.
3) Select Menu 5, then press Start.
4) When the beep sounds, press Stop. Remove the bread pan, let it cool for a couple of minutes, and then remove the loaf.
