Creamy Mushroom Quinoa Soup
This hearty mushroom quinoa soup is creamy and naturally. It's packed with umami mushroom flavour, protein, fiber, vitamins and makes for a perfect weeknight meal. Quick, easy and nutritious!
Ingredients
- 1 tbspOlive oil
- 1 noShallot, diced
- 5 clovesGarlic, minced
- 250 gMushroom, (mixture of shitake and button)
- 1 tbspFlour
- 2 cupsChicken broth
- 0.33 cupQuinoa
- 2 cupsMilk
For seasoning:
- Salt and pepper to taste
For garnishing:
- Parsley, sautéed mushroom and whipping cream.
Steps
1) Heat up olive oil in a frying pan, sauté shallot, garlic and mushroom until fragrant.
2) Place sautéed ingredients, flour, chicken broth and quinoa into Panasonic Cooking Blender, select SOUP -> START.
3) Pour in milk for the last 1 minute of the cooking time.
4) When it is done, season with salt and pepper. Ready to be served.
