Baking without eggs
Baking without eggs
If you don’t take eggs, you can replace them with baking soda and baking powder for leavening, binding and moisture retention. Here’s a simple baking recipe to start with:
1. Mix together all the wet ingredients - 2 cups of full cream milk, 2 tsp apple cider, 2 cup mashed bananas, 2/3 cup canola oil and 2 tsp vanilla extract.
2. Now mix them with the dry ingredients - 2.5 cups all purpose flour, 2 cups sugar, 1 cup cocoa powder, 2 tsp baking soda, 1 tsp baking powder, ½ tsp salt
3. Grease moulds and pour the mixture in.
4. Microwave at medium high (500 - 600 watt) for 5 minutes. Your eggless cake is ready to serve.
Mayonnaise
Homemade mayonnaise minus eggs
1. Take 2 cups olive oil, 1 tbsp lemon juice and ½ tsp xanthan gum and a bit of water.
2. Blend the ingredients using a blender.
3. Your eggless mayonnaise is ready!
Apple Cake
Eggless cocoa Apple Cake
1. Preheat your oven to 350F/180C for 15 Mins.
2. Mix ¼ cup sifted cocoa, 1 tsp baking soda, ½ tsp salt and 1½ cup whole wheat pastry flour in a bowl.
3. Mix 1 cup water, ¼ cup unsweetened applesauce, oil, 1 tsp freshly squeezed lemon juice and 1tsp vanilla extract separately
4. Stir together and place the mixture in a greased cake
5. Place in the oven for 30-35 minutes.
