Snow Fungus and Rockmelon Soup
Comforting and beneficial for skin health, this Japanese-inspired twist on a classic Chinese dessert soup (tong sui) uses rockmelon in place of papaya for a milder floral sweetness and a tender textural bite.

Ingredients
Main Ingredients
- 400 gRockmelon
- 20 gSnow fungus (Rehydrated)
- 8 pcsDried red dates (Pitted)
- 5 gDried goji berries
- 15 gDried longan
- 75 gRock sugar
- 900 mlWater
Steps
1) Roughly cut rehydrated snow fungus. Soak the dried dates, goji berries and longans for about 10 mins.
2) Remove melon skin and seeds. Cut melon into 5 cm pieces.
3) Add all ingredients into the blender.
4) Cover and secure lid. Select “Healthy Soup”| 60 mins.
5) Add rock sugar and snow fungus through the valve 15 mins into cooking.
6) Serve warm and enjoy.
