Oven-steamed Whole Sea Bream
Steamed fish is effortless with the oven's Steam function. Here’s a Japanese-inspired recipe for steamed sea bream, with seaweed, shimeji mushrooms, dashi and a dash of lemon juice for a simple, healthy, heart-nourishing dish packed with flavour.

Ingredients
- 250 gSea bream (scaled & cleaned)
- 3 gSalt
- 150 gWakame seaweed (soaked)
- 100 gShimeji mushroom
- 180 mlKombu dashi
- 0.5 lemonLemon (zest & juice)
- 1 stalkSpring onion (thinly sliced)
Steps
1) Slice 3 slits on each side of the fish. Season the whole fish with salt, both inside the cavity and on the outside.
2) Spread the wakame seaweed and shimeji mushrooms on a deep plate.
3) Lay the fish on top and pour dashi and lemon juice over it.
4) Fill up the oven's water tank. Place at the lower shelf and steam it for 10-12 mins
Tips: Adjust cooking time according to the size of the fish.
5) Zest some lemon over the fish and garnish with spring onion on top. Served warm with white rice.
