Salad with Mussels
Bring the sea home with this delicious meal. Our salad with mussels is made quickly and tastes just like a seaside getaway.
Ingredients
- 200 gmussels
- 1orange
- 2 tsplime zest
- 50 gbaby spinach (fresh)
- 1onion
- 1 tbspolive oil
- Salt and Pepper
- thyme
- rosemary
- 50 mltomato juice
Steps
STEP 1
Put the mussel meat in a bowl.
STEP 2
Dice the onion. Peel and separate the orange slices. Grate the lime zest. Add everything to the mussels in the bowl.
STEP 3
Add the tomato juice, olive oil, and herbs.
STEP 4
Season well and cook in the microwave for 6 minutes at 60 watts.
STEP 5
Allow to cool briefly, and then fold in the spinach. Enjoy!
