  • 400 gduck breast
  • 1 tspground cumin
  • 1 tspsalt
  • 1 tspblack pepper
  • 2 tbsphoney
  • 4 tbspHoi Sin sauce
  • 250 gsnow peas
  • 1 tspchopped garlic

Steps

STEP 1

Preheat the microwave to 180°C. Season the duck breasts with ground cumin, salt and pepper on both sides.

STEP 2

Bring a pan to high heat. Sear the duck on the flesh side for 1 minute, then sear the skin side for 5 minutes on low heat. Once the skin is of a nicely-roasted colour, roast in the preheated oven for 8 minutes. Test it by inserting a skewer. If the juices run clear, it is done. Then allow it to rest for 5 minutes.

STEP 3

To make the sauce mix, bring the honey and Hoi Sin sauce to a boil. Cut the duck into fine strips and drizzle with the sauce mix.

STEP 4

Preheat a frying pan on high heat. Add in the olive oil, sauté the garlic, and then stir-fry the snow peas for about 3 to 4 minutes. Add salt to taste.
