Gluten-Free Cinnamon Fruit and Seed Loaf
Try out our simple yet delicious gluten-free cinnamon, fruit, and seed loaf recipe. Make this easily in the bread maker for breakfast or a snack.
Ingredients
- 120 gwarm water
- 100 gdried fruit (Finely chopped if needed (eg. prunes, apricots, raisins, goji berries))
- 150 gmilk (or almond milk)
- 1 tspvanilla extract
- 15 gfast acting yeast
- 30 gcaster sugar or honey
- 400 ggluten-free bread flour
- 1 tspbaking powder
- 1 tspxanthan gum
- 2beaten egg
- 1 tbspground cinnamon
- 100 gmelted unsalted butter or dairy-free spread
- 50 gmixed seeds (Example: sesame, pumpkin, sunflower)
- 0.5 tspsea salt
Steps
STEP 1
Place the dried fruit in the warm water and soak for 5-19 minutes to soften. Place the water and fruit into the loaf tin with the remaining ingredients.
STEP 2
Stir briefly to mix in the loaf tin.
STEP 3
Place the loaf tin in the bread machine. Close the lid.
STEP 4
Select the gluten-free bread programme. Press start.
STEP 5
When the machine beeps, your loaf is baked!
