Gin and Tonic Cheesecake

Here’s a perfect summer twist on a delicious cheesecake, ideal for an outdoor meal.

Ingredients

  • 250 gdigestive biscuits
  • 100 gbutter
  • 600 gcream cheese
  • 100 gicing sugar
  • 280 mllemon zest
  • 40 mlgin
  • 10 mltonic

Steps

STEP 1

Butter and line a 23cm loose bottomed cake tin with parchment paper.

STEP 2

Crush the biscuits to a crumb in a large bowl. Melt the butter on Medium microwave for 1 min or until melted. Add to the biscuits and mix thoroughly. Tip into the prepared tin and press firmly to make an even layer. Leave to set.

STEP 3

Place the cream cheese, icing sugar, lemon zest, double cream, and gin and tonic to a bowl. Beat with an electric whisk until smooth or until the mixture has thickened. Spoon it onto the biscuit base and smooth it so it’s evenly spread. Leave to set in the fridge overnight.

STEP 4

Remove carefully from the tin onto a serving plate. Top with a handful of crushed meringue and lemon slices and zest before slicing.
