Cauliflower Soup
Cream of cauliflower soup – rich in antioxidants, vitamins and minerals, cauliflower also boosts digestive health.
Ingredients
- 600 gcauliflower
- salt
- black pepper
- 40 golive oil
- 100 g peeled and dicedonion
- 2 lvegetable stock
- 240 mlmilk
- for garnish fresh thyme
- for garnish sourdough bread chunks
Steps
STEP 1
Cut the cauliflower into small pieces and transfer to a heatproof bowl. Season with salt and black pepper and drizzle some olive oil over the cauliflower. Add in the onions.
STEP 2
Use the STEAM function, (High) and touch the set key and select cooking time of 10 minutes. Touch START to steam the cauliflower and onions until soft.
STEP 3
Heat the vegetable stock and milk on stove. Add the cooked vegetables, vegetable stock and milk into the blender.
STEP 4
Blend the mixture until smooth, without any solid chunks. Garnish with fresh thyme and a pinch of black pepper. Serve with sourdough bread chunks as a meal.
TIP: Toast the bread chunks to get crispy croutons to go with the soup.
