Strawberry Daifuku with Naturally Sweetened Medjool Dates
Mochis are the seemingly tricky little desserts to make. In truth, though, the process becomes deceptively simple with a microwave. The dough can be made within 5 minutes in the microwave before being shaped and filled with your favorite fillings for a simple, delicious dessert.

Ingredients
Mochi dough:
- 90 gGlutinous rice flour, plus more to dust
- 0.25 cupCornstarch
- 0.25 tspSalt
- 180 mlWater
- 1 tbspVegetable oil
- 6 pcsStrawberries, stems removed
Date paste
- 120 gMedjool dates, pitted (or soak red dates for 30 mins)
- 90 mlWater, plus more if needed
1. Prepare Date Paste
Steps
1) Combine medjool dates and water in a bowl
2) High | 1.5 mins
3) Transfer dates and liquid to blend until smooth
4) Blend | Speed 1
2. Cook Mochi Dough
Steps
1) Combine medjool dates and water in a bowl
2) Add vegetable oil, salt and water
3) Whisk until smooth
4) High | 1 min
5) Take out and gently mix the mixture
Tip: Repeat 2-3 times at 30 secs, mix in between until mochi is cooked
3. Roll mochi dough
Steps
1) Cut into 6 pieces.
2) Place 10g of red date paste and wrap
3) Cut a slit to place strawberry onto mochi
