Miso-glazed Whole Carrots
Microwave-cooked vegetables are common now, so here's a funky new upgrade. The whole carrots (skin and all) are first cooked with their own steam in the microwave before it goes through a secondary cooking process where it's grilled/broiled with a miso glaze until caramelised and slightly charred.

Ingredients
Carrots
- 8-10 pcs Heirloom carrots (choose a mix of colours)
- 2 tspSesame seeds
- 2 tspFurikake
- 1 stalkSpring onion, thinly sliced
Miso Glaze
- 3 tbspRed miso or dark miso
- 2 tbspSoy sauce
- 1 tspSesame oil
- 1 tspBrown sugar
Miso Dressing
- 2 tbspVegetable oil
- 0.5 tspSesame oil
- 1 tspRce vinegar
- 2 tspWhite miso
- 1 tspSoy sauce
- 0.5 tspHoney
1. Cook Carrots
Steps
1) Place carrots in a large dish
2) Cover with a lid
Tip: Cooking carrot in the microwave is quicker than regular steaming
3) High | 3 mins
2. Prepare Miso Glaze
Steps
1) Mix miso, soy sauce, sesame oil and brown sugar
2) Stir to combine
3) Glaze carrots and place back into microwave
4) Grill 1 | 15 mins
3. Prepare Miso Dressing
Steps
1) Combine miso, honey, soy sauce, rice vinegar and sesame oil
2) Add vegetable oil and whisk to combine
