Vegetarian Chickpea Gratin

If you eat little or no meat, add our quick chickpea dish to the menu. Chickpeas provide more protein than some types of meat, as well as around 6mg of iron per 100g.

Ingredients

  • 240 gchickpeas (from a can)
  • 1garlic clove
  • 2mushrooms
  • 2spring onions
  • 0.25pepper
  • Salt and Pepper
  • 100 mlcream
  • 50 gcrème fraîche
  • 100 gcheddar (grated)

Steps

STEP 1

Drain the chickpeas in a colander.

STEP 2

Chop the mushrooms, spring onions and the pepper.

STEP 3

Put the vegetables in a bowl with the chickpeas. Press in the garlic.

STEP 4

Mix everything with cream and crème fraiche. Season well with salt and pepper.

STEP 5

Place the vegetables in a 9-inch baking dish and sprinkle cheese over top. Prepare in the combination oven on microwave at 300 watt for 3 minutes and broil level 1 for 7 minutes.
Tip: A fresh salad with raspberry dressing tastes really delicious along with this.
