Spring Vegetables with Crunchy Walnut Crumble

- 100 g shelledbroad beans
- 200 gbaby carrots (trimmed)
- 150 ggreen beans
- 150 gasparagus (trimmed)
- 150 gbaby courgettes (substitute: zucchini)
Dressing
- 1 tbspolive oil
- 1 tbsplemon juice
- 0.5 tspdijon mustard
- salt and black pepper
Steps
STEP 1
Preheat the grill on GRILL 1. Spread the walnut pieces out onto the enamel tray. Place in the upper shelf position and toast for 5-6 minutes or until golden, turning halfway. Put to one side to cool.
STEP 2
Fill the water tank. Place all the vegetables into the glass tray and place in the upper shelf position. Select STEAM 1 and SIMMER MICROWAVE and cook for 10-12 minutes or until tender.
STEP 3
Meanwhile, mix together the olive oil, lemon juice, and Dijon mustard.
STEP 4
When vegetables are done, mix together with walnut crumble and dressing. Season with salt and black pepper.
