Spinach and Ricotta Lasagna

Make our microwave vegetarian lasagna in no time at all. Layered with delicious ingredients, lasagna is a family favourite. This old-school Italian dish is generally heavy on the meat sauce and quite time-consuming to put together. We’ve given lasagna a meatless makeover and created a recipe that you can put together and have on the table in no time at all, using a standard microwave.

Ingredients

  • 500 gricotta cheese
  • 4 cupsbaby spinach (chopped)
  • 2 cupsmozzarella (grated)
  • 0.25 cupparmesan cheese (grated, with extra to sprinkle)
  • 0.25 tspsea salt
  • 0.25 tspblack pepper
  • 700 gtomato-based pasta sauce
  • 9lasagna sheets

Steps

STEP 1

In a bowl, combine the ricotta, 1 ¼ cup of mozzarella, ¼ cup of parmesan, salt and pepper.

STEP 2

Grease the bottom of a rectangular baking dish and cover base with 3 lasagne sheets.

STEP 3

Top layer with 1/3 of the pasta sauce, 1/3 of the baby spinach, and 1/3 of the ricotta mixture.

STEP 4

Layer with 3 lasagne sheets and repeat.

STEP 5

Cover with remaining lasagna sheets, the remaining pasta sauce, baby spinach, and ricotta.

STEP 6

Top with remaining mozzarella and sprinkle with extra parmesan.

STEP 7

Cover with parchment paper and a microwave safe plate. Microwave on high for 20 minutes.

STEP 8

Let stand for 10 minutes before serving.
