Ingredients

  • 5 cupscooked penne pasta
  • 4 cupscherry tomatoes
  • 1 tspvegetable oil
  • 1/2 cup heavy cream
  • 1/2 cup creamy ricotta
  • 1/2 tsp sale
  • 1 lbItalian sausage, removed from casing
  • 3 clovesgarlic, minced
  • 1/2 onion, diced
  • 1 bell pepper, chopped into ½ inch squares
  • 3 cupsspinach
  • 1/2 tsp chili flakes
  • 1/2 cup grated parmesan
  • 2 cupsgrated mozzarella

Steps

STEP 1

Cook pasta according to directions on package.

STEP 2

Press Broil once to select Broil 1 setting

STEP 3

Place cherry tomatoes on enamel shelf and toss with vegetable oil. Broil tomatoes for 15 minutes on top shelf position, until slightly charred.

STEP 4

In a food processor combine cooked cherry tomatoes with heavy cream, ricotta and salt, combine well, set aside.

STEP 5

Heat a large frying pan over medium heat, add sausage and cook. Once sauce is cooked, remove from the pan and set aside.

STEP 6

In the same pan add garlic, onion and bell pepper.  Cook for 3-4 minutes or until the garlic is golden brown.

STEP 7

In a large mixing bowl, toss cooked pasta, sausage and vegetable mixture with prepared tomato sauce. Stir in spinach, chili flakes and parmesan cheese. Transfer mixture to an 8”x11” casserole dish.

STEP 8

Place casserole dish on wire shelf in the middle position. Press Combination five times and set  cook time for 15 minutes.

STEP 9

Remove from oven, top with mozzarella and bake for an additional 10 - 15 minutes.

STEP 10

Garnish with fresh basil and enjoy!
