Salmon Lasagna with Spinach
Here’s a simple but super-sweet twist for all lasagna fans.
For a vegetarian version, replace the fish with smoked tofu.
Ingredients
- 1lemon
- 2garlic cloves
- 100 mlmilk (3.5% fat)
- 400 gsour cream (10% fat)
- 1 tbspcornstarch
- Salt and Pepper
- nutmeg (grated)
- 300 gsalmon (ready to cook)
- fresh lasagna noodles
- 200 gfresh baby spinach
- 100 ggouda (grated)
Steps
STEP 1
For the sauce, first wash the lemon and dab dry. Zest and squeeze for juice. Grate the garlic and grate finely.
STEP 2
Mix the lemon zest and juice with garlic, milk, cream and cornstarch. Season with salt, pepper and nutmeg.
STEP 3
If necessary, rinse salmon with cold water and dab dry. Cut into cubes. Wash spinach and shake dry.
STEP 4
Brush the bottom layer of a 25 x 18.5 cm baking dish with sauce. Place a layer of lasagna noodles and sprinkle with sauce again.
STEP 5
Spread half of the spinach and salmon on top. Drizzle with sauce. Place another layer of pasta. Repeat for another layer. Place a final layer of noodles and spread with the remaining sauce.
STEP 6
Sprinkle with cheese and place in the microwave. Cook on high for 20 minutes.
