Grilled Aubergine, Mint and Couscous Salad
A fresh, healthy salad is a meal for all occasions. Whether you are having a quick lunch on the go, or your preparing an appetizer for family dinner, this dish will do the trick. The mix of grilled aubergine, mint, garlic and coriander couscous is sure to get your tongue tingling with flavour.
Ingredients
- 1large aubergines
- 2 tbspolive oil
- Salt and Pepper
- 115 ggarlic and coriander couscous
- 30 gfresh chopped mint
Steps
STEP 1
Pre-heat grill 1.
STEP 2
Cut the aubergine into large chunky pieces and toss them in olive oil.
STEP 3
Season with salt and pepper and spread them on to the enamel shelf. Place in the higher shelf position and cook on Grill 1 + Steam 1 for 8-10 mins turning 1/2 way.
STEP 4
Cook the couscous according to the pack instructions.
STEP 5
Stir the grilled aubergine and mint into the couscous, serve immediately with a crisp green salad and sprinkle with pomegranate seeds if desired.
