Cauliflower Couscous Salad

An extra portion of vegetables is hidden in our couscous salad, because what looks like couscous is really… cauliflower! It is the perfect ingredient for our deliciously light summer salad when mixed and roasted—gluten-free and full of vitamins and minerals. Plus, just 200g of cauliflower are enough to cover the daily requirement for vitamin C. But the best thing about cauliflower? It takes good!

Ingredients

Servings:1
  • 1cauliflower
  • 250 gcherry tomatoes
  • 12green olives
  • 1cucumber
  • 2 tbspfresh mint
  • 2 tbspextra virgin olive oil
  • 1spring onion
  • Salt and Pepper

Steps

STEP 1

Cut the cauliflower florets into small pieces and place in a blender. Crush until a granular mass reminiscent of couscous is produced.

STEP 2

Place cauliflower couscous on the microwave baking tray. Cook for 3-4 minutes on combination of 440W + High Grill.

STEP 3

Chop olives, cherry tomatoes, spring onions, olives and cucumbers.

STEP 4

Place cauliflower in a bowl. Add chopped vegetables. Season with salt and pepper, and add mint and olive oil. Stir the salad once more and serve.
